It’s sometimes hard to know it’s fall in Texas. The temperature is still too hot and the grass is still green. If it weren’t for the kids being back in school and Starbucks selling Pumpkin Spice Latte, I might still think it’s summer-time. So for me, I have to find ways to bring a little fall into my life. One great way is with this super yummy/healthy Pumpkin Spice Oatmeal. I love oatmeal for many reasons: it’s healthy, warm, keeps me sated for several hours in the morning and depending upon when I eat it- it can be a great post-work out meal.
Here is a basic recipe that can be tweaked in many ways to suit your tastes. The ingredients are very simple – you may have them in your pantry already.
This recipe serves four (so you may want to decrease the ingredients if you are only making a single serving).
PUMPKIN SPICE OATMEAL
Makes 4 servings
- 1 cup unsweetened pumpkin puree (not pumpkin pie filling)
- 2 cups old-fashioned rolled oats
- 3 ½ cups low fat milk or low fat vanilla soy milk
- ¼ cup chopped pecans (or walnuts)
- Spice blend: 1 teaspoon ground cinnamon + ½ teaspoon ground ginger + 1/8 teaspoon ground cloves
- Pinch of salt
Combine the milk, oats and pumpkin in a large saucepan and bring to a boil. Once boiling, add in the spices. Reduce the heat to low and cook for appx 5 minutes (or desired thickness), stirring occasionally. Removed from the heat. Sprinkle with the nuts. Enjoy the healthy taste of fall.
